Measurements [metric]
- 1/2 cup vegetable oil
- 4 ounces chocolate, melted
- 2 cup granulated sugar
- 4 eggs
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 2 cup flour
- 2 teaspoons baking powder
- chocolate nonpariel candies
- powdered sugar
Mix the oil, chocolate and sugar until well blended. Add one egg at a time to this mixture. Mix well and add the vanilla. Sift the flour, salt and baking powder and add to the chocolate mixture.
Chill the dough for several hours or overnight. Drop 1 teaspoon of the dough into the powdered sugar. Roll it around and form a ball. Place these rounded shapes on a greased cookie sheet and bake for about 10 minutes at 350 degrees F.
Remove cookie sheet from the oven, and place a nonpariel candy into the center of each of the hot cookies. Remove them from the cookie sheet and cool completely on a rack.
These are delicious, fudgy chocolate cookies! I first tasted them at a friend's house during a holiday gathering of teachers. We always eat well when we get together and often have recipes available for anyone who is interested.
