Measurements [American]

  • 12 med eggs
  • 475 mL canola oil
  • 600 g white sugar
  • Either:
    • 3 lemons, grated and squeezed
    • 175 mL real lemon juice concentrate
  • 3 tsp baking powder
  • 1.3 L unbleached flour

Add oil and sugar and mix, add eggs one at a time mixing well after each addition add lemon and zest. Then add flour mixture a little at a time. Then let sit for 10 minutes.

Heat up waffle iron, give it a light spray of pam and then drop by the teaspoon onto hot waffle iron, close lid and cook until light brown, usually you can do 4 at one time. Use a fork to gently pull away from grids. Do not cook to long or the waffles will be to dry.

This recipe can be cut in half, and freezes well. Take frozen waffles and spoon ice cream in between and make ice cream waffles.

This recipe comes from my mother-in-law although I converted it from a handful of this and that to a recipe that everyone can follow, it is an Italian tradition and I make it every Christmas.
